Sugar and Spice Cookies (... Freedom Cookies?)
3 cups flour
1 cup and 1 tbsp dark brown sugar
1 egg
2/3 cup oil (I used a mixture of canola and olive oils)
1 cup milk
1/2 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon nutmeg
2 1/4 teaspoons ginger
1/2 teaspoon allspice
2 teaspoons cinnamon
Mix the flour and 1 cup of the dark brown sugar thoroughly, making sure to get out all the clumps. Add the spices. (Here I added baking powder, not realising we were out of baking soda.) In a separate bowl, mix the egg, oil, maple syrup, vanilla, and final tablespoon of sugar. Mix thoroughly. Add the oil mixture to the flour mixture. Mix thoroughly.
Bake for 15 minutes at 350 degrees. Eat while warm!
These are...mmmmmm. They remind me of summers at Old Sturbridge Village and sweating in those heavy cotton dresses and white bonnets. (Yeah, I was one of the nerdy kids who went and did the whole Sturbridge Village in the summer in costume and character thing.) I am pleased I managed to capture the taste and chewiness considering I never baked their cookies and just made up the recipe on the spot.
Is it my own recipe if I looked at four or five recipes, decided I didn't like them, but got ideas of ratios from them? But used different ingredients?
Also, this is the perfect recipe for my Sugar and Spice mix (not just because they're sugar and spice cookies) - by the time C is for Cookie came on, the cookies were ready for eating!
ETA: More than half the batch of cookies was eaten in under an hour. I am officially declaring this a hit, with both the world's pickiest eater and two health nuts. If the weather stays cool, I'll be making a double/triple batch on Sunday and bring some to work on Monday.
