Orange-Ginger Salsa
2 oranges
ginger root
maple syrup
dried ginger
cinnamon
lemon juice
lime juice
brown sugar
Shread some ginger root (I was aiming at a tablespoon but not exactly counting). Peel and demembrane the oranges (get the fruit meat out of the bitter white membrane) - use a sharp knife. Mix in bowl. Mash orange meat. Watch juice pool at bottom of bowl. Add to bowl - 1/2 teaspoon lemon juice, 1/2 teaspoon lime juice. Sprinkle dried ginger and cinnamon to taste. Add two heaping dashes of maple syrup (honey might be a good substitute) and a spoonful of brown sugar. Mix thoroughly.
We'll be eating this over haddock tonight, but I plan to try it on other white fish, chicken, and possibly apples and crackers. Licking my fingers was a tasteful delight - orange + maple + ginger = amazing.
*Any measurements are in exact because unless I'm baking and need to measure things like yeast and flour, I generally don't believe in them. Do what smells/tastes good.
